Regarding the midi file displaying chords - Select Digital Recording/Song. Tab to Sysex page, press Button H (Filter), press Button E (style) and ensure the 'Chord Name' box is ticked.
There are a couple of ways to see which instrument is played on which track, go to the Mixing Console and press the button until Song CH1-8 is displayed. This shows the first 8 channels (in this case it also means tracks). You can see from the icons which type of instrument is on that track. To see the exact voice press Button C to ensure the voices are selected then press Button 1 upwards. This displays the exact voice. The lead instrument is usually on track1 (Right 1). You can change the instrument by this method. If you do change anything in the mixing console then without leaving the mixing console select Digital Recording/Song and go through the normal saving process.
To mute an instrument in the midi and choose your own to play , load the midi file, find out which track the relevant instrument is on and press the Channel On/Off button. This displays all 16 channels. If the instrument is on CH1 press Button 1 upwards (if it's CH 9 press downwards). The channel will switch from ON to OFF. That channel of the midi is now muted and you can now select you instrument using the normal voice buttons to play along with the midi.
