As a self confessed one finger melody player, and having great fun doing so, I pose the following question.
What is the best way to spice up and embelish melody lines. I will never be a great player but I don't wont my listeners to fall asleep.

Without hearing your songs it's hard to advise, however as a generalisation you could add countermelody tracks after you've recorded the song, you can add multipads either during or after recording, you can make key changes during recording. Layering voices and using the right voices is also an option.
Give us an example (preferably a midi file) and we'll advise further.

I too, play only with one finger! BUT! You don't need that to limit your abilities! As long as you have the music in your head then you have the keyboard to put it on!

Spike gave some good advice as far as adding background music, counter-melody, etc.

I have done that too, with my music. Adding violins and cellos to the background makes it sound fuller (violins for hi and cello for low frequencies). Again: doing that makes the music sound fuller. (Sometimes it makes it sound "older", too, if that is what you want.)

Using violins/cellos can be done in old music and even rock & roll, so don't limit yourself and full speed ahead! (Engage......................)
